As Torun Wafer, we apply a meticulous production process to offer you the highest quality and delicious wafers with more than 40 years of experience. Wafer production, although it may seem simple, is actually the result of delicate balances and meticulous work. In this article, we will explain the production process of our wafers step by step.
Our production process starts with the selection of the highest quality raw materials. Each of the ingredients such as wheat flour, sugar, vegetable oil, cocoa, milk powder and natural flavourings are carefully checked and those that meet the highest quality standards enter the production line.

Preparation of Gofret Leaves

The first step in wafer production is the preparation of thin and crispy wafer sheets. Flour, water and other ingredients are mixed with a special mixer to obtain a fluid dough. This dough is cooked in special wafer cookers at a temperature of 150-180°C for about 1-2 minutes to form thin, golden yellow wafer sheets. Temperature and time control is very important at this stage, because the slightest mistake can affect the consistency and texture of the wafer sheets.
The special baking techniques we use at Torun Wafer ensure that the wafer sheets are both crisp and light. Our years of experience and traditional recipes guarantee that each leaf has the perfect consistency.

Preparation of Filling Cream

While the wafer sheets are being prepared, the filling cream is prepared in special boilers. This cream, which is obtained by mixing cocoa, sugar, vegetable oil, milk powder and flavourings in precise proportions, is one of the most important elements that provide the unique taste of our wafers. Each batch of cream is tested for taste, consistency and quality in our laboratory.
The cooled wafer leaves and the prepared filling cream are brought together in special machines to form layers. A standard Torun wafer consists of five wafer sheets and four layers of cream. These layers are combined under pressure in special presses to distribute the cream evenly over the leaves. Then, it is cut and shaped in desired sizes in cutting machines.

Packaging and Quality Control

The wafers, whose cutting process is completed, undergo a final quality control before proceeding to the packaging stage. Products that do not meet the standards in terms of appearance, structure and taste are separated. The wafers, which pass quality control, are packaged in hygienic conditions in special packaging machines.
